INSTRUCTIONS
Mix the mustard, oil, vinegar, capers, olives and lime juice in a bowl and season. Next add the chopped basil. Pan fry the bread in plenty of olive oil until golden. Drain on paper. Fry the cheese on a high heat until golden. Season the tomatoes and place on top of the bread with the chopped basil. Place the cheese on the top and sprinkle over vinaigrette.
