Patatas Bravas (spicy Potato)

INGREDIENTS

2 Dried red chillies
400 g Potatoes, sliced into large
wedges skins-on
1 Spanish onion, peeled and
diced
6 Cloves garlic
1 t Cumin seeds
4 Olive oil

INSTRUCTIONS

Pound the ingredients in a pestle and mortar or electric processor
until a smooth paste and spread it on the potato wedges.  Bake in a hot
oven (200C/400F/gas 6) for 45 minutes until the centre  of the potato
wedges are done but not crumbly and falling apart.  Converted by
