Poached Pears With Butterscotch Sauce

INGREDIENTS

750 g Conference pears, peeled
halved and
cored 1 1/2lb
150 White wine, 1/4 pint
2 T Caster sugar
50 g Butter, 2oz
75 g Soft dark brown sugar, 3oz
2 T Golden syrup
142 Double cream, 5 floz
Fresh mint sprigs to
decorate optional

INSTRUCTIONS

Place the wine and sugar in a saucepan and stir until dissolved. Add
the pears, cover and simmer gently for 15 minutes, turning
occasionally, until tender. Remove from the pan and allow to cool.
Meanwhile, melt the butter, brown sugar and syrup in a saucepan,
stirring occasionally. Boil for 2-3 minutes, then stir in the cream.
Serve the sauce hot or cold with the pears.  Converted by MC_Buster.
