INGREDIENTS

125 g Self-raising flour, 4oz
1 t Bicarbonate of soda
100 Milk, 3 1/2fl oz
100 g Cooked, mashed potato
seasoned 3 1/2oz
1 Size egg, lightly beaten
25 g Butter, melted 1oz
2 T Vegetable oil
1 125 gram pac English Premium
ham
100 g Fruit chutney, 3 1/2oz

INSTRUCTIONS

Sieve the flour and bicarbonate of soda into a medium mixing bowl.
Make a well in the centre, add the milk, mashed potato and egg. Stir
with a wooden spoon until well combined.  Add the melted butter and
stir in.  Heat the oil in a frying pan. Spoon rounded tablepoonsful of
the  mixture into the pan, about 2cm apart.  Cook over a medium heat
for 3 minutes on each side until golden brown.  Cut the ham slices in
half and place on to the potato pancakes.  Serve with the fruit
