INGREDIENTS

2 T Oil
3 Boneless skinless chicken
breast halves
1 Garlic clove, minced
1 c Broccoli flowerets
1 c Red pepper strips
1 c Carrot slices
1/4 c Sliced green onions
1/2 c Miracle Whip
1 T Soy sauce
1/2 t Ground ginger

INSTRUCTIONS

Heat oil in skillet over high heat.  Cut chicken into strips, add to
skillet with garlic; stir-fry 3  minutes.  Add vegetables; stir-fry an
additional 3 minutes.  Reduce heat to medium; stir in Miracle Whip, soy
sauce and ginger.  Simmer 1 minute.  Serve over rice.  Possum Kingdom
