Thai Pasta Salad With Peanut Sauce

INGREDIENTS

1/4 c Evaporated skim milk
4 1/2 t Creamy peanut butter
4 1/2 t Red onion, finely chopped
1 t Lemon juice
3/4 t Brown sugar
1/2 t Soy sauce, low sodium
1/8 t Ground red pepper
1/2 t Fresh ginger root, grated
1 c Whole wheat spaghetti
Cooked, drained hot
2 t Green onion, finely
Chopped

INSTRUCTIONS

Combine milk, peanut butter, red onion, lemon juice, sugar, soy  sauce,
and red pepper in medium saucepan.  Bring to a boil over high  heat,
stirring constantly.  Boil 2 minutes, stirring constantly.  Reduce heat
to medium-low. Add ginger; blend well.  Add spaghetti;  toss to coat.
Top servings evenly with green onion.  Serve.  [Calories: 187; 26% Cals
