Tomato And Basil Sandwiches With Olive Mayonnaise

INGREDIENTS

1/4 c Mayonnaise
8 Kalamata olives, pitted
minced
or other brine-cured black
olives
12 Country-style bread –
1/2"-thick ovals
1 c Fresh basil leaves –
loosely packed
chopped coarse
3 Tomatoes, each cut into
Four 1/2"-thick slices

INSTRUCTIONS

In a small bowl combine well the mayonnaise and the olives, spread the
mixture on one side of the bread slices, and sprinkle it with the
basil. Divide the tomato slices among half the bread slices, season
them with pepper, and top them with the remaining bread. This recipe
