Tuscan Rice And Beans

INGREDIENTS

1/4 c Olive oil
1 c Onions, chopped
2 Cloves garlic, minced
1/2 lb Spinach leaves, washed
stemmed
2 c Canned tomatoes, drained
chopped
1 1/2 qt Cooked rice
3 c White beans, cooked
3 T Fresh mint, chopped
2 T Dried rosemary, crushed
2 T Red wine vinegar
2 T Sherry
1 pn Salt
1 pn Ground black pepper

INSTRUCTIONS

Saute onions in oil until tender. Add garlic, tomatoes and spinach;
saute 3 to 5 minutes or until spinach is wilted.  2.Add remaining
