INGREDIENTS

1 lb Fat-trimmed lean beef stew meat in 1/2-inch cubes
1 cn (6-oz) tomato paste
2 Onions; finely chopped
2 Bell peppers; seeded and diced (up to)
2 Cloves garlic; minced (up to)
4 ts Chili powder (or combine 1 minced small hot pepper; 2 teaspoons cumin seed or 1 teaspoon ground cumin; and 1 teaspoon dried oregano)
1 ts Plain cocoa powder; optional
4 servings, 240 calories each.

INSTRUCTIONS

Stir meat and tomato paste together in crockery cooker.  Stir in other
ingredients (add no water or other liquid).  Turn cooker to low heat; cover
and cook for 12 hours.  Skim, and discard any fat from the surface.  Makes
