INGREDIENTS

2 c Unbleached flour
1 1/2 c Granulated sugar
1 ts Baking powder
1 ts Baking soda
1 ts Cinnamon
1/4 ts Nutmeg
1/4 ts Cloves
1/4 ts Ginger
1 c Applesauce
1/4 c Buttermilk*; at room temperature
1/2 ts Vanilla
3 Egg whites; whipped
2 c Apples; shredded

INSTRUCTIONS

Preheat oven at 350.  Prepare a 13" x 9" x 2" baking pan lightly with
cooking spray and flour.  In a mixing bowl, combine flour, sugar, baking
powder, baking soda, cinnamon, nutmeg, cloves, and ginger.  In another
mixing bowl, combine applesauce, buttermilk, vanilla, egg whites, and
apples.  Mix dry ingredients with dry ingredients just until moistened.
Pour batter into prepared pan.  Bake for 35 to 40 minutes.
