Arpicot preserves

Salt

Orange rind; grated

INSTRUCTIONS
Cook carrots until tender in enough salted water to cover (about 20
minutes); drain. Combine remaining ingredients, stirring until well
blended. Spoon over carrots, and toss well. Serve at once.
