We Love God!

God: "I looked for someone to take a stand for me, and stand in the gap" (Ezekiel 22:30)

Love is the fruit of the Spirit (Gal. 5:22), and the Spirit is given in answer to prayer (Lk. 11:13). Love is the outworking of faith (Gal. 5:6), and faith is sustained by prayer (Mk. 9:24, Lk. 22:32). Love is rooted in hope (Colossians 1:4-5), and hope is preserved by prayer (Eph. 1:18). Love is guided and inspired by knowledge of the Word of God (Phil. 1:9; Jn. 17:17), and prayer opens the eyes of the heart to the wonders of the Word (Psm. 119: 18). If love is the path of fullest joy, then let us pray for the power to love “that our joy might be full!”

Avocado and Mozarella Cheese Stuffed Tomatoes

INGREDIENTS

2 Avocados; cut in 1/2" cubes
6 oz Mozarella; cut in 1/2" cubes
4 lg Tomatoes; vine ripened
5 lg Cloves garlic; chopped
1 tb Basil; fresh chopped
2 tb Balsamic vinegar
1 ts Dijon mustard
4 tb Extra virgin olive oil
2 tb White wine
Red leaf lettuce for garnish
Garlic chives for garnish

INSTRUCTIONS

DRESSING
Cut tomatoes in half and scoop out insides. (Can be used in place of tomato
concasse to make Tomato-Basil Cream Sauce.) Set each half on top of lettuce
garnished plate. In a blender, add garlic, basil, balsamic vinegar, oil and
white wine. Blend and adjust according to taste. Toss with Avocado and
Mozarella cubes until completely coated. Stuff tomatoes with mixture and
garnish with garlic chives or other long thin garnish stuck into tomatoes.
Looks terrific and tastes unbelievable!
