INSTRUCTIONS
Preheat oven to 400°F, prepare pans. Fry the bacon until crisp, drain &
reserve the bacon fat, chop bacon. Stir together the flour, baking powder,
sugar, salt & cheese. Mix the egg, milk & bacon fat or butter. Add the dry
mix along with the bacon to the wet mix until just combined. Mixture will
be somewhat lumpy. Spoon into cups & bake for about 25 mins or until done.
Makes
15 medium or 12 large muffins.
