Baked Spinach Casserole

INGREDIENTS

3 tb Butter
2 c Light cream
3 tb Onion; grated
2 pk Frozen spinach; thawed and drained
1 lb Mushrooms; chopped
3 tb Gruyere or Swiss cheese; grated
3 tb Flour
2 ts Salt
1/4 ts Nutmeg
1/4 ts White pepper

INSTRUCTIONS

Preheat oven to 325 degrees.
Saute' onions and mushrooms in butter for 5 minutes. Blend in flour, salt,
pepper and nutmeg. Gradually add cream, stirring to boiling point. Taste
for seasoning.
In buttered casserole, spread half the spinach; cover with half of the
mushroom sauce, then repeat. Sprinkle with the grated cheese. Set in pan of
hot water.
Bake for 40 minutes.
