INGREDIENTS
| 4 | lb | Cooked yams |
| 1/2 | c | Butter; melted |
| 3 | Eggs; slightly beaten | |
| 2/3 | c | Orange juice |
| 1/3 | c | Brown sugar; packed |
| 1/4 | c | Brandy |
| 1 | tb | Grated lemon peel |
| 1 | ts | Cinnamon |
| 1/2 | ts | Salt |
INSTRUCTIONS
Beat cooked yams with electric mixer, adding melted butter - add remaining ingredients and beat until smooth - butter a 2 quart casserole and spoon in the mixture - bake at 350 degrees for 45 minutes or until set.
