Barbecue Sauce (Microwave)

INGREDIENTS

4 tb Unsalted Butter
1 md Onion, Chopped
1 Clove Garlic, Minced
1/2 c Diced Celery
1 c Water
1 c Catsup
1 Diced Red Pepper
1/4 c Fresh Lime Juice
2 tb Cider Vinegar
1 tb Worcestershire Sauce
1 Slice Lime Cut In Half
1/2 ts Ground Cumin
1/4 ts Chili Powder
3 ds Tabasco Sauce
Salt To Taste
1/4 c Chopped Fresh Coriander

INSTRUCTIONS

Microwave butter, onion and garlic in a medium microwave safe bowl, covered
with plastic wrap, on high power for 2 minutes.  Stir in celery and
microwave covered for 2 minutes.  Stir in remaining ingredients except
coriander until blended.  Microwave covered for 7 minutes, stirring halfway
through cooking.  Puree sauce in a blender bowl or food processor. Transfer
to bowl and stir in all but 1 tb coriander.  Garnish with remaining
coriander.  Serve warm or at room temperature.  Makes 2-1/2 cups. 81
