INGREDIENTS

3 c Unbleached flour
3 1/2 ts Baking powder
1/4 ts Baking soda
1 ts Salt
1 c Blueberries
1/2 c Granulated sugar
1 Egg white — whipped
1 c Skim milk — at room
Temperature
1/3 c Orange juice — at room
Temperature
1 tb Orange peel — grated
1/2 c Applesauce

INSTRUCTIONS

Preheat oven at 350.  Prepare pan(s) with cooking spray and flour.  In
mixing bowl, combine flour, baking powder, baking soda, salt, blueberries,
and sugar. In another mixing bowl, combine egg white, milk, juice, orange
peel, and applesauce.  Mix dry ingredients with wet ingredients just until
moistened.  Pour into prepared pan(s).  Bake for 1 hour depending on pan
size.
