Bottle liquid pectin
INSTRUCTIONS
Grate colored peel of orange and lemon.Combine peel and water, heat to
boiling, cover and simmer for 10 mins. Mash blueberries in large pot and
add peel mixture. Discard pith from orange and lemon. Chopp flesh finely
and add to blueberry mixture. Heat to boiling, reduce heat, cover and
simmer for 10 mins. Stir in sugar and bring to a rolling boil. Stir in
pectin and bring to a rolling boil again. Boil hard 1 min. Remove from heat
and skim. Ladle into hot jars and seal. Process for 10 mins. Makes 3 3/2
pints.
