INGREDIENTS

10 lb Beef
5 lb Pork or mutton fat; (Sheep tail).
2 tb Coriander seed ground
1/2 Grated nutmeg
4 tb Salt
2 tb Ground cloves
2 tb Allspice
2 tb Pepper
2 tb Chile powder or to taste *

INSTRUCTIONS

* Added to the original recipe.
Mince beef and cut fat into small cubes. Mix all ingredients well. Cover
for one hour. Fill large size skins (casings) and tie ends.
