Braised Asparagus

INGREDIENTS

3 tb Unsalted butter
2 lb Medium asparagus spears; tough ends removed
Fine sea salt; to taste
Freshly ground pepper; to taste
Coarse see salt; to taste

INSTRUCTIONS

In a large skillet, melt butter over Medium heat. Add asparagus and shake
the skillet unitl they fall into a single layer on th bottom of the pan.
Raise the heat slightly and cook until the butter starts to sizzle, 1-2
minutes. Season with fine sea salt and pepper. Reduce heat to Low. With a
spatula, rotate the asparagus as they cook, turning them so they brown
slightly on all sides. Cook for an additional 10-12 minutes, or until
tender. Taste for seasoning. With a slotted spoon, gently transfer the
asparagus to a platter. Sprinkle with a small amount of coarse sea salt.
Serve immediately
Serves 6.
Per serving: 89 calories, 16 mg. cholesterol., 6.4 grams fat, 4 mg. sodium,
