Breakfast Muffins

INGREDIENTS

1/2 c Lowfat yogurt
2 Egg whites, lightly beaten
3 1/2 tb Orange juice concentrate
1/2 c Soaked raisins
1/2 c Rolled oats
1/2 c Flour
1/2 ts Ground cinnamon
1/2 ts Baking soda

INSTRUCTIONS

Preheat oven to 375F. Spray 6 muffin cups with pam and set aside. Combine
yogurt, egg whites, orange juice concentrate, raisins and oatmeal. Let
stand 10 minutes. Combine flour, cinnamon and baking soda. Add to yogurt
mixture and immediately spoon into muffin cups. Bake until golden brown and
a toothpick inserted in center comes out clean, about 25 minutes.
