Broccoli Polonaise

INGREDIENTS

1 lb Broccoli
1/4 c Butter, divided
1/4 c Fine bread crumbs
1 tb Lemon juice
1 Egg, hard cooked, sieved
Salt and pepper to taste

INSTRUCTIONS

Peel broccoli stems. Cut X in base of each stem. cook or steam broccoli
until just tender. Melt 1 tablespoon butter in small skillet. Add bread
crumbs. Saute until golden brown. Set aside. Melt 3 tablespoons butter in
saucepan. Add lemon juice. Pour hot liquid over broccoli. Season with salt
and pepper. Spoon into serving dish. Top broccoli with sieved hard cooked
egg and reserved crumbs.
