INGREDIENTS
| 4 | Fresh zucchini, about 4" long | |
| Pepper, to taste | ||
| 4 | sl | Bacon, halved |
| 1 | c | Cheddar cheese, grated |
| Fresh parsley, chopped, for garnish |
INSTRUCTIONS
Preheat broiler and but broiling pan 7" from heat. Split unpeeled zucchini lengthwise and sprinkle cut sides with pepper. Put on heated pan and broil 10 minutes. Put a bacon piece on each zucchini half and top generously with cheese. Broil approximately 5 minutes longer, or until bacon is crisp and cheese is golden brown and bubbly. Sprinkle with chopped parsley. NOTES : The family just loves these.
