INGREDIENTS

3 tb Butter
1 pk (8-oz) link sausages
6 Eggs
1/2 c Half-and-half
Salt to taste
Pepper to taste
1 ds Chives
1/8 ts Parsley
1/4 c Cooked bacon; crumbled
1 c Monterey Jack cheese
1 9-inch pie shell; baked

INSTRUCTIONS

Fry sausages, slice and set aside. Melt butter in a large skillet.
Meanwhile, combine all remaining ingredients (except the cheese) in a bowl
and whip with a wire whisk. Pour into the skillet and cook on low heat,
stirring with a fork until the eggs are cooked, but still soft. Pour the
mixture into a 9-inch pie shell. Place sausages on top of the egg mixture,
top with cheese, and place under the broiler until the cheese is melted,
about 3-4 minutes.
