Carnitas 1 (Little Meat Cubes)

Meats Mexican Ham/pork 1 Servings

INGREDIENTS

2 lb Lean pork
Salt and pepper to taste
A dusting of pasilla pepper, ground

INSTRUCTIONS

Cut the pork into 1" cubes.  Dust with salt, pepper, and pasilla pepper,
and let rest for 1 hour.  Place the meat in a shallow baking pan in a 300
degree oven for about 2 hours. Pour or siphon off the fat from time to
time. Drain on paper towels and serve with Salsa Cruda and/or Guacamole.
Makes 25 to 30 carnitas.
