Here’s the Christmas message: The shepherds believed and their belief resulted in action. They immediately departed for Bethlehem. The Bible says they “found their way to Mary and Joseph, and the baby as He lay in the manger.” They also proclaimed the good news to others as the first Christian evangelists when they told others what was told them about the Child. And then they worshipped. Luke 2:20, “The shepherds went back, glorifying and praising God for all that they had heard and seen, just as had been told them.”

Beef tenderloin

Onion; thinly sliced

Stalk celery; thinly sliced

Cloves garlic

Lemon; thinly sliced

Dry red wine

Red wine vinegar

Brown sugar

Parsley stems

Orange; thinly sliced
1/2

Capers

Pickling spice

Salt
Leaf lettuce
Finely chopped onion; capers
Orange wedges; lemon slices
INSTRUCTIONS
1. Remove all fat and tendons from the tenderloin. Place in the freezer to
firm, 15 to 20 minutes.
2. Combine remaining ingredients in a non-aluminum pot. Bring to a boil,
reduce heat, and simmer for 10 minutes. Cool and strain. Discard solids.
Reserve marinade.
3. With sharp knife or slicing machine, cut the tenderloin into paper thin
slices. Arrange the tenderloin slices on a bed of lettuce. Place a small
mound of finely chopped onions and capers in the center. Garnish with
orange wedges or sliced lemon, if desired.
