Trials should not surprise us, or cause us to doubt God's faithfulness. Rather, we should actually be glad for them. God sends trials to strengthen our trust in him so that our faith will not fail. Our trials keep us trusting; they burn away our self confidence and drive us to our Savior.

Carrot/raisin Salad

INGREDIENTS

8 Carrots, peeled (up to 10)
1 c Raisins, or more to taste
1/2 c Orange juice
Splash of balsamic vinegar, or more to taste
1 cn Cubed pineapple, with some juice
1/2 c Shredded apple (optional) (up to 3/4)

INSTRUCTIONS

Using food processor if handy, grate carrots. Mix with all other
ingredients, including food processed apple if desired, and chill. Very
refreshing and healthy. I have seen this made with fat-free mayo but not
really necessary since the orange juice/vinegar acts as a great dressing.
