INGREDIENTS

4 8 Oz Catfish Fillets
Salt And Pepper; to taste
1/2 c Flour
1/4 c Vegetable Oil
1/4 lb Butter; melted
2 tb Lemon Juice
1 tb Parsley; chopped

INSTRUCTIONS

Season catfish fillets with salt and pepper; dredge in flour. Lightly brown
on both sides in skillet with melted shortening. Remove from skillet and
place in oven dish.  Bake in 350 F. oven for 10 minutes. Meanwhile, have
ready in small pot, butter and lemon juice. Remove fish from oven and place
on serving platter. Bring lemon and butter mixture to a boil and stir. Add
salt and pepper, to taste. Pour over the fillets and garnish with sliced
lemon and curly leaf parsley.
Yield:  4 servings.
