Cherry Chocolate Chip Banana Muffins

INGREDIENTS

1/2 c Oil
1 c Sugar
2 Whole eggs
3 Bananas; mashed
2 c Flour
1 ts Baking soda
1 ts Salt
1 ts Vanilla
1/2 c Maraschino cherries; drained and chopped
1/2 c Chocolate chips

INSTRUCTIONS

Beat oil and sugar together. ( You can substitute 1/2 cup of unsweetened
applesauce for the oil ) Add the eggs and then stir in the bananas. Sift in
the flour, soda and salt. Add vanilla, cherries, and chocolate chips. Bake
at 350 degrees for 15 to 18 minutes.
NOTES : Can be made into a bread ; put loaf pan inside another loaf pan for
even baking.  Bake at 350 for 60 - 65 minutes.
