God: "I looked for someone to take a stand for me, and stand in the gap" (Ezekiel 22:30)

Yet with all their faults and character flaws – as remarkably ordinary as they were – these men carried on a ministry after Jesus’ ascension that left an indelible impact on the world. Their ministry continues to influence us even today. God graciously empowered and used these men to inaugurate the spread of the gospel message and to turn the world upside down (Acts 17:6). Ordinary men – people like you and me – became the instruments by which Christ’s message was carried to the ends of the earth. No wonder they are such fascinating characters.

INGREDIENTS

2 lb Chicken pieces
2 tb Oil
1 Red onion; chopped
2 Garlic cloves; crushed
1 Green pepper; chopped
2 Tomatoes; peeled, seded and chopped
1 Hot (chili) pepper; whole
2 tb Chopped coriander
3 c Beer
Salt; pepper and cumin to taste

INSTRUCTIONS

This is a typical dish from Ecuador, my country. One of my favorite
recipes. Hope you like it.
In a large saucepan, heat the oil and saute the onion, garlic, tomatoes,
green pepper and coriander. Season with salt, pepper and cumin.
Add chicken and cook, stirring for a few minutes. Add beer and whole hot
pepper.
Cover and cook at medium heat until tender (about 30 minutes).
Serve with yellow rice and fried ripe plantain.
Serves 4-6.
