Meats Soup 6 Servings

INGREDIENTS

1 (5-6 pound) chicken; cut up
6 c Hot water
1 md Onion; sliced
1 tb Salt
1/2 ts Pepper
2 ts Ground allspice
3 c Sliced celery
1 c Uncooked regular rice
Finely minced giblets

INSTRUCTIONS

Heat water in a heavy kettle. Add seasonings, onion, and chicken. Cover,
simmer for about 2 to 2-1/2 hours or until just tender. Add celery, rice,
and giblets. Cover and cook for 20 minutes or until rice is tender. Thicken
if desired. Yield: 6 servings.
