Here's a side to the Christmas story that isn't often told: Those soft little hands, fashioned by the Holy Spirit in Mary's womb, were made so that nails might be driven through them. Those baby feet, pink and unable to walk, would one day walk up a dusty hill to be nailed to a cross. That sweet infant's head with sparkling eyes and eager mouth was formed so that someday men might force a crown of thorns onto it. That tender body, warm and soft, wrapped in swaddling clothes, would one day be ripped open by a spear. Jesus was born to die.

Spiritual pride is very apt to suspect others, but a humble saint is most jealous of himself. He is as suspicious of nothing in the world as he is of his own heart. The spiritually proud person is apt to find fault with other saints...and to be quick to notice their deficiencies. But the eminently humble Christian has so much to do at home, and sees so much evil in his own heart, and is so concerned about it, that he is not apt to be very busy with other hearts... Pure Christian humility disposes a person to take notice of everything that is good in others, and to make the most of it, and to diminish their failings, but to give his eye chiefly on those things that are bad in himself.

Chicken with Raspberry Vinegar

INGREDIENTS

1/2 lb Chicken breast fillets
Salt & pepper to taste
Vegetable cooking spray
2 tb Butter
1 tb Chopped scallions
2 tb Raspberry vinegar
1 tb Water

INSTRUCTIONS

Sprinkle each fillet with salt and pepper.  Spray skillet with cooking
spray.  Add butter & heat. Saute chicken breasts for a few minutes on each
side until opaque.  Set aside and keep warm.  Sprinkle scallions in pan,
saute for a few seconds, then add raspberry vinegar and water. Stir well to
loosen all cooking residue.  Cook for one minute, return breasts to pan and
continue to cook until done (another few minutes), turning once. Serve
immediately with sauce.
