TAMALE BALLS
FOR SAUCE
"Coffee filters make excellent tamale wrappers, "precut, durable and they
come in several sizes".
It.s a lot easier to make the tamales if you mix the meat mixture and the
man mixture together, then all tamales in the batch have the same
proportions of meat and masa for a uniform product.
They're a lot easier to make and taste just as good. If the recipe yields
more than you want, freeze half of the balls and cut the sauce ingredients
by half."
Combine first five ingredients. Mix dry ingredients and add. Shape into
about 40 small balls. In large Dutch oven combine sauce ingredients. Drop
balls into sauce and simmer, tightly covered, for two hours.
