INGREDIENTS

8 c Hot strong brewed coffee; divided
1/2 c Sugar
1/4 c Cocoa
1 ts Ground cinnamon
1 tb Vanilla extract
4 c Half-and-half

INSTRUCTIONS

Whisk together 1 cup coffee and next 4 ingredients in a large heavy
saucepan. Cook over medium heat, whisking constantly, 4 to 5 minutes or
until smooth and slightly thickened. Gradually add half-and-half; cook,
whisking constantly, 4 to 5 minutes or until thoroughly heated (do not
boil). Process half of mixture in a blender 1 to 2 minutes or until frothy.
Pour 3 1/2 cups coffee into a 2-quart pitcher; add half of frothy coffee
mixture. Repeat procedure with remaining ingredients. Serve immediately, or
chill and serve over ice, if desired.
Yield: about 12 cups.
