Hell is not the North Star. That is, divine wrath is not our guiding light. It does not set the direction for everything in the Christian faith like, say, the glory of God in the face of Christ. Neither is hell the faith-wheel which steers the ship, nor the wind that powers us along, nor the sails that capture the Spirit’s breeze. Yet hell is not incidental to this vessel we call the church. It’s our ballast, and we throw it overboard at great peril to ourselves and to everyone drowning far out at sea.

Crabmeat Queso Blanco

INGREDIENTS

8 oz Cubed Monterey Jack cheese
3 oz Cream cheese; warmed to room temperature
1 cn (6 oz) quality crabmeat with all bits of shell removed
3 Minced pickled jalepeno peppers; (to taste) (up to 5)
1/2 ts Fresh ground black pepper
1/2 c Chopped scallion
4 oz Heavy cream

INSTRUCTIONS

Add cheese, scallion, pepper and jalepeno to mixing bowl. Heat in a
microwave for a minute or so, add a little cream and stir. Heat again, add
more cream & stir some more. Repeat the process untill all the cream is
incorporated and the mixtire is very soft. Mix in the crabmeat. Warm in
microwave before serving, making sure to stir frequently to prevent
burning. Do not overheat. Serve with tortilla chips and salsa (Blue corn
chips provide a nice contrast).
