Cream of Onion Soup

INGREDIENTS

2 sl Bacon
1 c Sliced onions
2 tb Flour
3 c Water
1 2/3 c Evaporated milk
1 ts Salt; or to taste
Pepper to taste
5 sl Buttered crisp toast

INSTRUCTIONS

Cut the bacon fine with kitchen scissors, place in the soup kettle and fry
until just done, add onion and flour, and stir until the flour is blended
with the drippings. Add water gradually, and stir thoroughly until mixture
is smooth. Cover, and SIMMER until onion is tender, about 15 minutes. Add
milk, salt, and pepper, and reheat, uncovered, to boiling. Place a slice of
toast in the bottom of each soup bowl and pour hot soup over it and serve
immediately. 5 servings. (I also add grated cheese to the top of the bowl).
