Confectioners' sugar; if desired, in a shaker |

Mixture of pitted dates; candied cherries (well drained), soft pitted prunes and walnut halfs. |
INSTRUCTIONS
1. Cream butter and cheese together. Blend in flour and salt.
2. Chill for several hours, or until firm enough to roll. Roll to 1/4_-inch
thickness on board sprinkled with confectioners' sugar.
3. Cut in 1x3-inch strips with pastry wheel. Put your choice of fruit or
nut into center of each strip, and roll up. Place, folded side down, onto
cookie sheets.
4. Bake in moderate oven (375°F.) for about 15 minutes.
5. Cool slightly and, if desired, sprinkle with confectioners' sugar.
6. Makes about 8 dozen cookies.
(I find that fruits give the best results, the nuts are a bit too dry for
my taste. These cookies are fairly light and also freeze rather well.)
