Deep Fried Apple Fritters

Egg lightly beaten

Melted butter or margarine

Vanilla
Juice and rind of 1 orange; ( 1/3 cup
Juice plus 1 tablespoon rind)

Chopped apple
INSTRUCTIONS
Combine flour, baking powder, salt and sugar; set aside. Combine milk, egg,
melted butter and vanilla. Combine dry and liquid ingredients and stir to
blend them together. Add orange juice, rind and apple and mix well.
Drop from a teaspoon into deep hot fat ( 400 degrees). Fry for about 2
minutes or until crisp and very brown. Remove from fat and drain. Dust with
powdered sugar or a mixture of granulated sugar and cinnamon and serve at
once.
Makes about 30.
