Eggplant and Hamburger Casserole

Eggs, Dairy Casserole 8 Servings

INGREDIENTS

1 lb Hamburger
1 Onion; chopped
1/2 Green pepper; chopped
1 Clove garlic; crushed
1 Eggplant
1 cn (no. 2) tomatoes
1 cn Tomato paste
3 tb Salad oil
1/2 lb Mozzarella cheese
Grated Parmesan cheese

INSTRUCTIONS

Saute onion, green pepper & garlic in oil. Add hamburger & brown, adding
salt & pepper to taste and 1 bay leaf if desired. Add tomatoes & tomato
paste & simmer about 1 hour. Peel & slice eggplant. Salt, pepper & flour
each slice. Brown in oil in a separate skillet. In a casserole, pladce
layer of eggplant & cover with some of the sauce, then add a layer of
Mozzarella. Repeat these layers again & top with grated Parmesan. Bake at
350    for 45 minutes.
