INSTRUCTIONS
Place lentils in a saucepan, cover by 1 inch with water. Bring to a boil,
reduce heat to a simmer, cover, and cook for 35 minutes. Drain and set
aside. Heat oil in skillet and saute peppers and onions until onions begin
to brown. Add tomato sauce and vinegar, bring to a boil, and then reduce
heat and simmer 5 minutes. Stir in lentils. Serve lentil mixture over
cooked rice and cooked elbow macaroni mixed together.
