2 c Cooked aduki beans
2 c Cooked orzo pasta
1 c Finely diced crunchy fennel
1 c Slivered roasted red peppers
1/4 c Finely sliced black pitted olives
1/2 c Packed Italian parsley,, chopped
1/2 c Dressing made with olive oil, balsamic vinegar, garlic
Salt and freshly ground black pepper
Crumbled goat or feta cheese for garnish

INSTRUCTIONS

Mix the ingredients together and season with salt and pepper; garnish with
cheese.
Yield: 4 servings
