INGREDIENTS

1 cn Salmon (1 pound)
1/2 c Mashed potatoes
1 T Grated onion
1 T Butter or other fat, melted
1/4 ts Salt
1/4 ts Celery salt
1 ds Pepper
1 ts Worchestershire sauce
1 Egg, well beaten
1/4 lb Sharp cheese
1 c Dry bread crumbs

INSTRUCTIONS

Drain and flake salmon.  Combine all ingredients except cheese and
crumbs and mix thoroughly. Shape into balls the size of walnuts.  Cut
cheese into 3/8 inch cubes.  Insert a cheese cube into the center of
each fish ball and reshape.  Roll in bread crumbs.  Fry in deep fat,
375=F8F., 3 to 4 minutes, or until golden brown.  Garnish and serve
hot, plain or with a sauce.
