INSTRUCTIONS
Preheat oven to 325 degrees. Place prunes, sweet potatoes, carrots,
and raisins in a 2 1/2-quart baking dish. Sprinkle with salt and
pepper. In a bowl, mix orange juice, 3/4 cup water, and ginger. Pour
over prune mixture. Stir once or twice to combine. Bake uncovered in
preheated oven for 1 hour, stirring after 30 minutes. Add a little
more juice and cover loosely with foil if dish becomes too dry. Serve
hot. This recipe yields 6 to 8 servings.
