INGREDIENTS

4 Fillets American grouper; (8 ounce)
Salt and pepper to taste
1 c Toasted corn meal
1 tb Olive oil
Relish
Plum Sauce
Dill for garnish
1/4 c Blanched lemon zest
1/4 c Julienne jalapenos
2 c Julienne carrots
2 c Julienne fennel bulbs
1/2 c Rice wine vinegar
1/4 c Olive oil
8 Plums; Juice of
1 Lemon; Juice of
1 tb Minced; fresh dill

INSTRUCTIONS

RELISH
PLUM AND LEMON JUICE WITH DI
Season fillets of grouper with salt and pepper and coat with corn
meal. In a saute pan heat oil, and saute grouper for 3 minutes on
each side, or until done.
Relish:
Combine all ingredients and season to taste with salt and pepper.
Plum and Lemon Juice with Dill:
Combine and spoon over grouper.
