1 pt Milk
1 1/2 oz Plain flour
1 1/2 oz Butter
1 Pinches cayenne pepper
2 oz Mature Cheddar; grated
1 oz Parmesan; (Parmigiano

Little freshly grated nutmeg
Salt and freshly milled black pepper

INSTRUCTIONS

1 Put the cayenne pepper, milk, butter and flour into a medium pan
and put on a gentle heat. Whisk with a balloon whisk, while heating
to a gentle simmer.
2 Whisk continually until a smooth glossy sauce, and simmer very
gently for five minutes. Add the cheeses and whisk again, allowing
them to melt. Season with salt, freshly milled black pepper and some
freshly grated nutmeg.
