Apple And Apricot Envelopes

INGREDIENTS

3 Apples, peeled cored and
chopped
1/2 c Apricots, finely chopped
fresh or canned
1 T Brown sugar
1/2 t Mixed spice
16 Sheets phyllo pastry
1/4 Light salad oil
Orange zest and juice to
garnish.
mins. or until golden brown.

INSTRUCTIONS

Mix apples, apricots, sugar and mixed spice together. Lay one sheet of
pastry onto a flat surface. Brush with oil and cover with second  sheet
of pastry. Spoon filling into the pastry and fold into a  envelope
shape. Continue in this way until all the filling is used  up. Bake at
