INGREDIENTS
1 1/4 | c | Whole wheat flour |
1 | c | Oat bran |
1/3 | c | Packed brown sugar |
2 1/2 | t | Baking powder |
1/4 | t | Baking soda |
1/4 | t | Salt |
1/4 | t | Ground nutmeg |
1/4 | t | Ground cinnamon |
1 | c | Low/non-fat buttermilk |
2 | Egg whites' | |
2 | T | Oil replacement, applesauce |
Prune puree, etc | ||
3 | c Shredded, peeled apple |
INSTRUCTIONS
~---------------------ADD--------------------------- Combine dry ingredients. Mix wet ingredients in a small bowl. Add to wet ingredients to dry ingredients until just moistened. Mix apple into batter. Spray muffin cups with non-stick spray and spoon about 1/4 cup batter into each muffin cup. Bake in a 375 F oven for 18-20 minutes or until a toothpick inserted near the center comes out clean. 12 Muffins. NOTE: can store batter, tightly covered, in the fridge for up to 5 days.
