Apple And Oat Bran Muffins (ovo Lacto)

INGREDIENTS

1 1/4 c Whole wheat flour
1 c Oat bran
1/3 c Packed brown sugar
2 1/2 t Baking powder
1/4 t Baking soda
1/4 t Salt
1/4 t Ground nutmeg
1/4 t Ground cinnamon
1 c Low/non-fat buttermilk
2 Egg whites'
2 T Oil replacement, applesauce
Prune puree, etc
3 c Shredded, peeled apple

INSTRUCTIONS

~---------------------ADD---------------------------  Combine dry
ingredients. Mix wet ingredients in a small bowl. Add to  wet
ingredients to dry ingredients until just moistened.  Mix apple into
batter.  Spray muffin cups with non-stick spray and spoon about 1/4 cup
batter  into each muffin cup.  Bake in a 375 F oven for 18-20 minutes
or  until a toothpick inserted near the center comes out clean. 12
Muffins.  NOTE:  can store batter, tightly covered, in the fridge for
up to 5  days. The picture on the front of the recipe card looked
