INGREDIENTS

10 c Unfiltered apple cider
Peel of 1 orange
2 Cinnamon sticks
1 pn Grated nutmeg -; (lg pinch)
6 Whole cloves
1/2 c Calvados or apple brandy
2 1/2 c Sugar syrup
(2 cups water and 1/2 cup sugar; heated
Until sugar dissolves)
4 c Sparkling cider
4 ts Apple cider vinegar
2 tb Freshly-squeezed lemon juice

INSTRUCTIONS

In a large heavy-bottomed saucepan, combine all the ingredients. Heat
until the mixture begins to simmer. Decrease to medium-low heat and
let the mixture steep and reduce (but do not let boil) to 8 cups,
about 1 hour. Refrigerate until cold. Pour reduced liquid into a
shallow pan. Freeze, stirring every 1/2 hour, until hard, about 3 to
4 hours. This recipe yields 2 quarts.
