INSTRUCTIONS
Preheat oven to 190C/375F/Gas Mark 5.
Grease a 12 by 7 inch baking tin.
Place apples and orange juice in a pan. Cover and cook over a low heat for
10-12 minutes until soft. Mash to Form a puree.
In a bowl, beat sugar and butter until light and creamy. Beat in egg and
apple puree. sift in flour, bicarbonate of soda, salt, baking powder and
cinnamon. Fold in the chopped dates and walnuts.
Pour cake mixture into prepared tin and bake in preheated oven for 40
minutes until risen and form to the touch.
Allow to cool and cut into 12 squares.
